# Directions:
01 - Add pitted dates, peanut butter, cinnamon, rolled oats, vanilla extract, and salt to a food processor. Blend until the ingredients are thoroughly combined and a thick, sticky dough forms.
02 - Portion approximately 1 tablespoon of dough, then roll between your palms to shape into logs or balls. Repeat until all of the mixture is used.
03 - If desired, roll each piece in chopped peanuts or shredded coconut to add texture and flavor.
04 - Arrange rolls on a parchment-lined tray and refrigerate for 15 minutes, allowing them to firm up before serving.
